Taco Salad Tuesday

Somehow I forgot to post yesterday's lunch?? The chic took a taco salad and some dark chocolate cookies that the hubs added to the Costco cart this weekend.


This salad was made up of all the leftover chicken taco ingredients from dinner the night before - chicken, lettuce, cheese, red peppers, tomatoes, etc...The dressing was sour cream that I thinned with milk. She loves sour cream!

Looks awesome! Could you really just leave the dressing in a cupcake liner like that? It didn't end up spilling over everything?

I was wondering the same thing as Alie. I sent pineapple today and the juice ended up everywhere.

I used Press N Seal around the cupcake liner and pressed it down really well. I did ask her about it today cause I was a little worried that it might not stay, but she said it was all in the cup. I'm not sure the Press N Seal would work with pineapple juice, though. The sour cream is still fairly thick.

This looks yummy! I think I will have to make taco salads soon.
I love to mix equal parts salsa and ranch dressing to make the dressing for my taco salads.
