Blue Corn Quesadillas

One of the great things about living in Texas is the availability of awesome Mexican ingredients. We did some grocery shopping at one of our favorite stores this weekend and as we walked by, they were pulling these blue corn tortillas off the griddle. They were just begging to jump into our cart...no, seriously...begging! So, we brought them home and made quesadillas for the chic's lunch tomorrow.


Watermelon flowers with kiwi hearts, Black beans, Sesame crunch, Sugar snap peas, Cheese and red pepper quesadillas on stone-ground blue corn tortillas.

Wowee, what a really colourful lunch! I love the blue tortillas, they really stand out. Is there any taste difference between blue and regular tortillas?

Thanks! Blue corn tortillas are sweeter than regular corn tortillas and the texture of them is more coarse - more of a stone ground texture. Plus they are have more protein and less starch so they're better for you.
